EverQuest Legends is very much a game that seems like it was designed for me.  A solo-focused version of EverQuest that lets me do raids and explore without respawning enemies?  Gonna be good for exploring and lore stuff.  So far I've only got like 8 hours in the beta (because my luck for getting into betas is butts) but here's my thoughts.

Overall
The quality of life tweaks are welcome and the new UI works well.  It's easy to create a personal instance of a zone, and it sticks around for... at least some amount of time when you aren't there so you can come back after selling stuff.  Also forgot how charming the old EverQuest models and animations are.  Not just the dumpy trolls or the meatball ogres, but all of them are just charming.

Stances and Inductions
A neat new system.  You can have one stance and one induction active at once, can swap at any time and they tend to greatly change how a battle goes.  Some stances are like "take 50% less physical damage, and 20% less magic damage" or "attack and recharge attack skills twice as fast, but take 8% of the damage you deal".  Inductions seem to more affect abilities, with the one I'm mainly using is Spellblade which gives your auto attacks a chance to trigger the first spell you have memorized.

Multi class system
The three classes thing works together more than I thought since they have access to different stances/inductions, and the different advancements that help each other.  Like I am currently using berserker & shadow-knight (haven't unlocked the third class yet).  The Berserker-exclusive stands gives double attack speed, and shadow-knight is one of the few classes that gets the Spellblade induction... and shadow knight has a spell that drains life from the target.  So this combines to more hits and more life drain.  Probably.

Also some things scale based on having multiple caster or melee classes active at once in case you really wanted to scale one particular aspect.

New/Changed Content
There's stuff in Legends that isn't either in the normal spot, or not in EverQuest at all normally.  Iksar are in the game, but Kunark isn't... so these Iksar are crashed in North Ro that were part of an expedition from Cabilis, possibly from before it was renamed as they are called the "New Selebis" expedition.  I don't know much about post-Velious EverQuest but someone pointed out they have taken over a dungeon from the Lost Dungeons of Norrath expansion, and kicked out a few NPCs that are normally there.

The Kerrans (cat people) will be in the game, but not as Vah Shir since you play the ones not launched to the moon.  And the Frogloks are the wide frogs from Guk, not the tree frogs you usually play as in EverQuest.  All neat changes, and required some new-ish work done to the game.  Also there's a new zone ported from EverQuest 2, but I don't know much about it and not sure it's in the beta yet.  Some existing zones were also tweaked.
